Strawberry Cupcake Adventures

This past weekend my boyfriend and I decided to make vanilla cupcakes with strawberry cream cheese icing. I'd been craving them all week. The first attempt was made on Saturday. Something went wrong and they ended up being hollow. Luckily we made too much icing so when we made more cupcakes on Sunday we could ice them. The second batch turned out amazing.

Picture time!

Recipe for the cream cheese icing:
  • 1/4 a cup of butter
  • 8 oz. of strawberry cream cheese
  • 1 pound of sifted powdered sugar (1 box or 3 and 1/2 cups)
  • 2 teaspoons of vanilla
Mix all of it together. It's really that easy.

UPDATE Review: Cococare 100% Cocoa Butter The Yellow Stick

Ok so, it's been about two months since I reviewed the Cococare Yellow Stick. I've seen a really big difference. My worst scars used to bump up on my skin quite a lot and now they're almost completely smooth. They used to be bright red but they've faded to either light pink or white. I have to admit I don't always remember to use it every day. I'm sure if I did it would work even better. I love the results I've gotten so much that I'm extremely tempted to try some of Cococare's other products. They have everything from foot lotion to lip balm. Check out their site if you want to see what else they have.

Make Mine Chocolate!

"Rabbits are a familiar symbol of the Easter holiday. In the days leading up to it, they appear on television commercials and packages of candy, and stores are filled with stuffed rabbits. It is no surprise that children beg their parents for a bunny of their own. Ill-prepared to care for these unique creatures, their "owners" often quickly tire of them. In the months following Easter, local humane societies and rabbit rescues are flooded with rabbits, former Easter gifts whose "owners" no longer want them. The unlucky ones are dumped outside where predators, cars, illness, and injury virtually guarantee an early death.

In 2002, in an attempt to address the problem, the Columbus House Rabbit Society began a campaign to educate the public on the realities of living with a rabbit, and to discourage giving live rabbits as Easter gifts. Using ceramic pins in the form of chocolate bunnies as the symbol, the campaign's goal is to spread the message that rabbits should not be casually acquired and to educate the public about the special needs of these often-fragile creatures. The pins serve as conversation starters. Comments about the pin provide the wearer the opportunity to share our message with the general public. These informal conversations are supported by a card that is distributed with each pin, and by business cards that can be handed out to interested parties. Both the pin card and the business card list important facts that should be considered before bringing a rabbit into the home. Our goal is to educate the public of the challenges of properly caring for rabbits and to encourage them to purchase chocolate Easter bunnies (or stuffed toy animals) rather than live rabbits. "

Organic Fruitation

Well, it’s a trend and maybe even a way of life we are all succumbing to, by desire or by demand, it’s here for all to experience. “Eco-Ethical Living” is the latest buzz word for what used to be known as saving, growing, reusing, remaking and not wasting.

My parents grew up with that lifestyle, not so much by desire, but because everyone needed to live that way back then. Many families had gardens, not for the pure joy of growing lovely flowers and a few tasty vegetables, but because it was the family food. It was eaten fresh in the summer and preserved, canned, frozen and dried for the other seasons. It was necessary, but it was enjoyable as well. It forced patience and perseverance, but rewarded with a bounty from the earth.

Well, that way of living; growing your own garden, sewing your own clothes, graciously accepting hand-me-downs and even reusing wrapping paper a few times is lost to many of us now. Don’t get me wrong, I like the accessibility in my life. I like being able to get any fruit or vegetable at the market any month of the year. I like being able to find trendy clothes that can be purchased from a store only a few blocks from my home. I even like designing wrapping paper that I know people will use for only a few brief moments before being crumpled up and tossed into the trash after the gift is uncovered. Well, in all honesty, that one hurts a little!

I am grateful that we are fortunate enough to have these accommodations so accessible. Our lives are easier and better than any other generation before us. I don’t want to forget that. I don’t want to take advantage of that. I want to be respectful of what has come before us and I want to be conscientious of how I treat my world.

The collection Organic Fruitation I have been developing is designed to speak to that eco-ethical lifestyle. We need to be responsible for our earth, think about our actions, and find little ways to make a difference where we can. Go green or grow greens, but more than anything else, learn from those who came before us and put into practice something from their basic lifestyle which really was eco-ethically lived.

And don’t forget that you also need a little “confection” in your eco-friendly life. I’m sure Ben or Jerry would agree to that!

Roller Derby

I've been a fan of roller derby for awhile now but had never had the opportunity to see a bout live. Last Saturday my boyfriend and I got to see not just one but two bouts. It was so much fun. The girls are amazing. The first bout was between the Atlanta Rollergirl's Sake Tuyas and Denim Demons. Both teams were great but the Denim Demons ran away and won the game 123 to 85. The second bout was much closer. It was between the Atlanta Rollergirl's B-Team, the Rumble B's and Jacksonville. The Rumble B's were down but came back on the last jam to win it 95 to 89. I definitely want to go again.

If you don't know the basics of roller derby this video does a really good job explaining them.

Here are some pictures I took of the 2nd bout. I'll be putting more up on my Flickr soon.

I took some video as well. There's more on my Youtube account.
