Hello hello! I've been in a baking mood this month and over the past weekend I ended up making two cakes. Both were delicious and I can promise, you need these two recipes in your life. And to keep it real, just as I was about to high-five myself for my baking prowess, a little mishap kept me humble ;) Enjoy!
Pretty Spring Cake by Glorious Treats

Oh. My. Goodness! This cake was so light and fluffy and lemony! Everyone who had it, loved it! The frosting was actually really easy to do, the recipe link also gives a how-to on the petal icing. I was pleased as punch with this cake. They do say pride comes before the fall...

Before I share the second cake, here's a bit of the back story. Pioneer Woman had a book signing in our area this weekend. Our Saturday was jam packed with activities but my sweet husband made sure I was able to go! The line was crazy so I didn't get a chance to personally meet her, but that didn't stop me from snapping a few paparazzi pictures on my phone!
Her new cookbook is AMAZING and when I saw her Coffee and Cream Cake I knew it had to be made immediately! I put Jack down for nap and spent the next two hours making this cake. It was gorgeous! I was so proud! Two cakes in a weekend! I carefully carried it out to the extra fridge in the garage and set it in there, closing the door gently. My SIL was coming for dinner and I knew she would be so impressed....

When dinnertime rolled around my SIL asked if she could peek at the cake in the fridge. Sure! I heard her open the door and then say "Um, Ko, I don't think it looks the way you left it". I rushed out to see what was wrong...



The top of the cake had slid off with half of the cream filling and landed in the door! What in the world!?!?! I was so mad! An entire nap-time was used up making this darn thing! Ugh! I carefully pulled the top of the cake out of the door and put it back on, so mad that I hadn't taken a photo when I first finished it.
Isn't it lovely? Not! That's what I get for being so proud of the first cake! In the end I still served it and I have to say...YOU MUST MAKE THIS CAKE! The coffee that is in the cake and icing is so satisfying and the cream filling in the center just makes you want to cry. If just for this recipe, you should get the cookbook!
